We make Oatmeal a lot at my home, especially when the budget is running tight. You can get a large canister of the name brand, Quaker Oatmeal for around $2-$3 on sale, and it's enough to make oatmeal for four for breakfast for most of the month. Throw in a 5 pound bag of apples for $1.99 to $3.99, depending on the sale, and you have what you need to make and serve breakfast for four for over a dozen times and still be well under $5 for each meal!
In addition to being low cost, oatmeal is also fairly healthy, with only 2.5 total grams of fat per 1/2 cup serving. Extra vitamins and antioxidants are found in the apple slices and it's peel.
There are four of us living in our house at the moment. All of us need to get up and get an early start each morning, but no one feels much like cooking this early in the day.
Our solution is oatmeal, made overnight, set on low in the crock pot.
Here's what you need to make:
Low Fat Apple Cinnamon Oatmeal in a Crock-pot
Ingredients:
1 2 quart crock pot or larger.
1 medium apple, washed, rinsed, sliced, with the skin left on. (I prefer the golden delicious variety, but choose whatever is local, and cheaper)
1/2 cup brown sugar
1 to 2 teaspoons cinnamon
2 cups Oats - Old Fashioned (not instant) Oatmeal
3 1/2 cups water
Steps:
Late in the evening the day before you want oatmeal for breakfast, out the sliced apple in the bottom of the crock pot.
Add the brown sugar and cinnamon on top of the apples and stir.
Add the Oats. Stir again to help reduce the space the ingredients take up in the crock pot.
Add 4 cups of water if you like thin Oatmeal, or reduce to 3 1/2 if you like thicker oatmeal, like we do.
Cook on low overnight, about 8 to 10 hours.
In the morning, up to four people can enjoy a healthy, hearty and warm, delicious breakfast! Enjoy!
